The story
Founded in 2014 by James and Moira Doherty, Sliabh Liag is the first legal distillery in Donegal in over 175 years, named after the towering sea cliffs on Ireland’s wild Atlantic coast, and inspired by James’s grandfather, a poitín maker from Kilcar.
Everything is made at the Ardara Distillery overlooking Loughros More Bay, on three copper pot stills with a traditional “all grains in” mash. Every whiskey is non-chill filtered, bottled at 46% and hand-finished, reintroducing drinkers to the rich, smoky Irish style that once defined the region.
